Harvest
Wine is made in the vineyard, on a single morning. The most important decision a winemaker makes isn't in the cellar — it's in the vineyard, on the morning the grapes are picked.
Pick too early — the wine is sharp and green. Pick too late — it's heavy and flabby. The window can be as narrow as 48 hours.
In Argentina, Vendimia — the harvest — starts in early March in Mendoza, then climbs in altitude through April to the highest vineyards of Salta.
