You don't need a wine fridge. A $10 digital thermometer and 20 minutes of forethought get you 95% of the benefit. The key insight: wine warms about 1°C every 4 minutes at typical room temperature, and cools about 1°C every 2 minutes in a fridge.

The Universal Rule of 20: Reds — 20 minutes IN the fridge before serving. Whites — 20 minutes OUT of the fridge before serving. Both wines hit their ideal temperature when you pull this trick.

The freezer trick (use sparingly): A wine that's too warm can go in the freezer for maximum 15 minutes. Set a timer — forgetting it makes the bottle explode. The freezer cools faster than the fridge by about 3×.
